i served a green peppercorn sauce over the beef wellington.
a sauce that i had to flambe.

it all turned out beautiful.
i also made a macaroni and cheese souffle
and simple garden salad to accompany the meal.
and randi made some yummy chocolate brownies for dessert.
{all by herself.}
my parents helped us consume all of this lovely food.
i'm pretty sure everyone went to bed with
happy, full bellies.

typically, mr. c handles sunday dinner.
he usually grills and whips up delicious side dishes.
this last sunday, however, he was a little preoccupied with a
little ol' football game.
{the cardinals were in a play-off game.}
and, i wanted to try a new dish...
beef wellington.
i saw tyler florence make it on
"tyler's ulitmate".
it looked difficult and fancy. i couldn't wait to give it a whirl.
this was a big undertaking for me because i rarely cook beef.
{that's mr. c's area of expertise.}
not only do i seldom cook it...i seldom eat it.
but, i was excited to try something new.
i spent most of the day in the kitchen.

i have always wanted to make that too (or eat it i should say) we tried makin it when we first got married but we didn't have money to but the right cuts of meat. it was still good, but i bet yours was to die for!!
